- 1 lge eggplant
- 3/4 lb grated mozzarella cheese
- 1/2 cup locatelli / parmesan cheese
- 2 cups tomato sauce
- Vegetable oil
- Salt & pepper

instructions
- Pre-heat oven to 375°
- Peel and slice eggplant
- Place slices on paper towels
- Lightly salt each side
- Allow to drain 15 min on each side to remove bitterness
- Fry in 1" deep oil until tender
- Drain on paper towels
- Put 1/2 cup sauce on bottom of baking pan
- Alternate layering with eggplant, both cheeses, salt, pepper & sauce
- End with sauce & cheese
- Bake 30 minutes
