Low Fat Pesto

When in doubt, just keep planting those basil seedlings before Christmas, and harvest it constantly to encourage lots of leaves.  Aim for mountains of it, and make this recipe up and freeze in this quanitity or in halves.

Ingredients

1 cup of fresh basil, tighly packed
440 g tin tomatoes
2 garlic cloves (chopped) or two teaspoons of minced garlic
1 to 2 tablespoons of pine nuts, toasted (Do this carefully on  asheet of foil under the grill)
1/2 teaspoon of salt
Optional:  A tablespoon of grated parmesan (recommended, but depends on how low fat you're aiming for)

Method

Throw everything into a food processor
Let it rip until everything is processed together.  Degree of smoothness is a matter of personal preference.

Use as for any pesto.  Great as a pasta sauce.
