Lip Snacking Chicken
Ingredients
| Chicken thighs, and / or legs |
| 1 cup olive oil (add more when want to brush the marinade on while
its cooking) |
| Juice of 1 lemon |
| 4 crushed cloves of garlic (!) |
| 1 tbsp ground cumin |
| 1 tbsp ground coriander |
| ¾ tbsp paprika |
| chopped parsley |
Method
| Mix everything that's not chicken together |
| Marinate chicken for a while |
| Cook chicken on BBQ for 12 minutes or so, basting to give crispy skin (unless you've
been healthy and removed all the skin) |
Serve with a salad of
| chopped cucumber pieces, |
| tomato wedges, |
| thinly sliced Spanish onion and |
| yellow capsicum |
| a dressing of balsamic vinegar, juice of ½ lemon and chopped parsley. |
| And a cooling sauce of plain yoghurt with juice of ½ lemon and some
chopped parsley. |
