Pumpkin Salad Goes Nuts!

Ingredients

1 kg pumpkin, peeled and cut into 2 cm cubes
3 rashers of bacon, rind removed, chopped
1 cup pecans (or walnuts if you REALLY can't get pecans)
1 red apple, cored and chopped
4 green shallots
2-3 sticks celery, chopped thinly
1/2 low fat mayonaisse
1/2 teaspoon ground nutmeg (fresh ground is best.  Be brave!)

Method

Boil, steam or microwave pumpkin until just tender.  Do not let it go mushy!!
Rinse under cold water, then drain and cool
Cook bacon in a non-stick pan until it is rown and crispy.  Put onto a plate covered in absorbant kitchen paper to soak up some grease.
Toss everything in a large bowl GENTLY.
Serves about 6.
