| 1 kg pumpkin, peeled and cut into 2 cm cubes | |
| 3 rashers of bacon, rind removed, chopped | |
| 1 cup pecans (or walnuts if you REALLY can't get pecans) | |
| 1 red apple, cored and chopped | |
| 4 green shallots | |
| 2-3 sticks celery, chopped thinly | |
| 1/2 low fat mayonaisse | |
| 1/2 teaspoon ground nutmeg (fresh ground is best. Be brave!) |
| Boil, steam or microwave pumpkin until just tender. Do not let it go mushy!! | |
| Rinse under cold water, then drain and cool | |
| Cook bacon in a non-stick pan until it is rown and crispy. Put onto a plate covered in absorbant kitchen paper to soak up some grease. | |
| Toss everything in a large bowl GENTLY. | |
| Serves about 6. |
