Spinach and Fetta Curry

Ingredients

2 packets frozen spinach
500g fetta cheese, cubed
1 onion, chopped finely
1 tbsp grated ginger
1 can tomatoes
1 teaspoon chilli flakes.  (Replace with 1/4 teaspoon chilli powder or a small chilli, seeded and chopped)
1 teaspoon ground coriander
1/4 teaspoon tumeric
1 tablespoon lemon juice
Oil

Fry onions in oil until starting to go translucent.  Add spices and fry  for a minute.  Add tomatoes and simmer for 10 minutes.

Add spinach, ginger and lemon jiuce and cook for 20 minutes.

Add fetta, cook 10 minutes.

Cook the day before!!
