| 2 packets frozen spinach | |
| 500g fetta cheese, cubed | |
| 1 onion, chopped finely | |
| 1 tbsp grated ginger | |
| 1 can tomatoes | |
| 1 teaspoon chilli flakes. (Replace with 1/4 teaspoon chilli powder or a small chilli, seeded and chopped) | |
| 1 teaspoon ground coriander | |
| 1/4 teaspoon tumeric | |
| 1 tablespoon lemon juice | |
| Oil |
Fry onions in oil until starting to go translucent. Add spices and fry for a minute. Add tomatoes and simmer for 10 minutes.
Add spinach, ginger and lemon jiuce and cook for 20 minutes.
Add fetta, cook 10 minutes.
Cook the day before!!
