Vegetable Cous Cous

Ingredients

l large onion chopped
1 large red capsicum, cut into chunks
2 carrots, peeled and cut into 1 cm rounds
2 zucchini, quartered lengthwise and cut into 2 cm pieces
2 1/4 cups of chicken or vegetable stock
1 cup raisins
3/4 tspn ground cinnamon
1/4 tspn tumeric
1 1/2 cups cous cous

Method

Saute onions in oil for 5 minutes
Add capsicum and carrots, cook for 5 minutes
Add zucchini, cook 5 minutes
Add stock, raisins, cinnamon and turmeric
Add salt and pepper to taste.
Bring to the boil.  Sprinkle cous cous over and stir briefly
Cover, remove from heat, and let stand for 10 minutes
Fluff with a fork, then serve.
