| l large onion chopped | |
| 1 large red capsicum, cut into chunks | |
| 2 carrots, peeled and cut into 1 cm rounds | |
| 2 zucchini, quartered lengthwise and cut into 2 cm pieces | |
| 2 1/4 cups of chicken or vegetable stock | |
| 1 cup raisins | |
| 3/4 tspn ground cinnamon | |
| 1/4 tspn tumeric | |
| 1 1/2 cups cous cous |
| Saute onions in oil for 5 minutes | |
| Add capsicum and carrots, cook for 5 minutes | |
| Add zucchini, cook 5 minutes | |
| Add stock, raisins, cinnamon and turmeric | |
| Add salt and pepper to taste. | |
| Bring to the boil. Sprinkle cous cous over and stir briefly | |
| Cover, remove from heat, and let stand for 10 minutes | |
| Fluff with a fork, then serve. |
