![]() | 1 large red capsicum, cut into chunks |
![]() | 2 carrots, peeled and cut into 1 cm rounds |
![]() | 2 zucchini, quartered lengthwise and cut into 2 cm pieces |
![]() | 2 1/4 cups of chicken or vegetable stock |
![]() | 1 cup raisins |
![]() | 3/4 tspn ground cinnamon |
![]() | 1/4 tspn tumeric |
![]() | 1 1/2 cups cous cous |
![]() | Saute onions in oil for 5 minutes |
![]() | Add capsicum and carrots, cook for 5 minutes |
![]() | Add zucchini, cook 5 minutes |
![]() | Add stock, raisins, cinnamon and turmeric |
![]() | Add salt and pepper to taste. |
![]() | Bring to the boil. Sprinkle cous cous over and stir briefly |
![]() | Cover, remove from heat, and let stand for 10 minutes |
![]() | Fluff with a fork, then serve. |
