4-1/2 lbs. Lean Meat
2/3 Cup Brown Sugar
Black Peper
1 Cup Curing Salt
2/3 Cup Liquid Smoke
Fillet meat into strips. Mix all ingredients together will. Add enough cold water to cover and let stand in refrigerato for 12 hours, stirring twice. Drain on paper towel. Sprinkle each piece with pepper. Let drip for an hour and dry in 125 to 140 degree oven for twelve hours. Refrigerate.

Venison Kabobs Teriyaki Style - submitted by president of Hunting & Trapping homepages


1 Cup Pineapple Juice
4 Tbsp. Brown Sugar
1 Clobe Minced Garlic
1 lb. Bacon
Cooked Rice
1/2 Cup Soy Sauce
1/2 tsp. Ginger
3 lbs. Boned Venison, Cubed
1 Fresh Pineapple Sliced
Combine pineapple juice with soy sauce, brown sugar, ginger, and garlic. Make kabobs by combining alternately on skewers; deer, bacon, pineapple. Place kabobs in shallow pan, pour pineapple marinade over, marinade. Grill for about 10 minutes, brushing occasionally with sauce. Turn and grill 10 minutes longer. Serve with rice.

3 lbs. Venison Roast
Salt and Peper
1 Large Green Peper, Sliced
3 Slices Bacon
2 Cloves of Garlic
1 Large Onion, Sliced
1 Small Can Whole Pimentos
With sharp-pointed knife, pierce meat several times and insert slices of garlic. Season with salt and pepper. Smother roast with onion, green pepper, pimento, and bacon. Add small amount of water, cover and bake in slow oven, basting occasionally. Drippings make an excellent gravy. YIELD: 4 servings

Venison in Rice - submitted by Babe Winkelman


6 venison chops
1 small box quick-cooking rice
1 can cream of celery soup
1 can cheese soup
1 small onion chopped
1 cup milk
1 pkg. onion soup mix
1 10oz. pkg. broccoli spears (THAWED)
Preheat oven 350. First sprinkle the rice in a buttered casserole dish. Place your venison chops on the layer of rice and sprinkle the chopped onions over the top of the chops. Mix the can soups with the cup of milk and pour over the chops. Sprinkle the dry onion soup mix over the entire casserole and place the broccoli spears over that. Cover with foil and bake for 2 hours in your preheated 350 degree oven.
