2 Ducks
1 onion. sliced
salt and pepper
1 can mushrooms, undrained
1 can mushroom soup
|
Clean and wash ducks. Fillet out breasts and place
in roasting pan and arrange legs at the sides. Cover
with mushrooms, soup, onion and sprinkle with
salt and pepper. Cover and bake for 2 hours at 325
degrees F.

4 Ducks, skinned, boned and cut inot cubes and strips
5 stalks celery, chopped
1 tsp. salt
2 large onions, sliced
1/2 lbs. lean bacon
3 qts. cold water
1 tsp. peppercorns
1 cub butter
1 can mushroom soup

Put the pieces of cleaned and washed duck in a
large sauce pan with the water and vegetables.
Seasonings, and spices tied in a small cheesecloth bag.
Bring Quickly to boiling point, then simmer until meat is
tender. Remove pieces of duck, plunge Them in cold
water, drain. Sprinkle with salt and peper, dust with
flour, brown on all sides in hot frying pan in the
shortening. Remove to baking dish, cover with strips of
bacon, smother with golden mushroom soup and cook in
moderate over until tender. Serve over rice
