Wild Rice Casserole
1 cup(8oz.) wild rice 1 tbsp. salt and boiling water Cover and cool 4 to 5 minutes. Add 1 can of mushrooms 1/4 lb. butter 1 cup milk
Bake at 325 degree for 1 hour or until tender (Add a little milk if it seems to get dry while baking).
Corn Beef Hot Dish
1 can corn beef ( 12 oz. ) broken up. 1/2 lb. noodles (cook & drained) 1 can cream of chicken soup 1 cup milk 1/2 cup grated cheese 1 small onion grated or chopped fine Salt & pepper to taste
Mix altogether; place in 1 quart casserole and bake about an hour in a 325 degree oven ( Serves about 10 )
Tuna Cashew Casserole
1 can tuna fish 1#. 2 1/2 chow mein noodles( save a 1/2 cup) 1/4 cup water 1 can mushroom soup 1/4 lb. nuts 1 cup celery (diced) 1/4 cup chopped onion salt and pepper to taste Mix all ingredients except 1/2 cup chow mein noodles to garnish top. Bake at 325 degrees for 25 minutes. Serves 4 to 6.
Scalloped Corn
Mix: 1 can cream style corn(no. 303) 1/2 cup milk 1/2 cup cracker or bread crumbs 1/4 cup chopped onion 1/4 cup chopped green pepper 1 tbsp. butter salt & pepper(to your taste) Bake 30 minutes at 350 degrees. Makes four servings.
Sweet Potato Casserole
Add:
3 cups cooked, mashed sweet potatoes 3 tbsp. butter or margarine 3/4 tsp. salt 1/4 cup orange juice Beat until light. Fold in: 1 9 oz. can pineapple(crushed & drained) Spoon potatoes into 1 quart casserole; dot with 1 tbsp. butter or margarine Top with: 6 marshmallows, cut in half Bake at 350 degreesuntil marshmallows are puffed and brown. Serves6
