Pies and Crusts


Here are the recipes I have on this page.
1: Custard Pie, 2: Crust, 3: Sour Cream Pie,
4:Pecan Pie


Custard Pie


4 eggs well beaten
1/2 cup sugar
1/2 tsp. salt
3 cups milk
1 tsp. vanilla
1/2 tsp. nutmeg

Mix together and pour into an
unbaked pie shell. Bake 10 minutes,
at 450 degrees.
Then 30 minutes at 350 degrees.



Crust


1 cup lard
3 cups flour
Mix well.
Beat 1 egg, add 5 tsp. cold
water and 1 tsp. vinegar, 1 tsp.
salt and add to flour mixture,
handle very little.
Bake at 375 degrees till brown.



Sour Cream Raisin Pie




1 cup raisins
1 cup sugar
1 cup water (boil for 10 minutes)
Then add 2 cups well beaten egg yolks
1 cup sour cream
3 tsp. corn starch
Pinch of salt

Cook until thick and pour into
baked pie crust. Beat white of
eggs for meringue and bake
until brown.
Brown in 350 degree oven.



Pecan Pie


Mix:
16 single square saltine crackers (rolled fine)
16 dates (finely chopped)
1/2 cup chopped pecans
1 cup sugar
Beat:
3 egg whites
1/4 tsp. baking powder
Fold egg mixture into first mixture.Pou into9 inch
pie plate. Bake at 350 degrees for 25 minutes.
Refrigerate.
Serve with whipped cream and chopped pecans.
