Morning Glory Muffins

2 c flour
1 1/4 c sugar (may mix with splenda 1/2 & 1/2)
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
2 c grated carrots
1/2 c raisins
1/2 c nuts
1/2 c coconut
1 chopped apple
3 eggs
3/4 c canola oil
1 1/2 tsp vanilla

Combine first 10 ingredients in large bowl. Stir well to blend (use hands). Beat oil,eggs, vanilla in small bowl. Add to dry ingredients until just moistened. Fill greased muffin cups 3/4 full (i use paper muffin liners and don't need to grease) Bake 350 degrees for 25 minutes. Makes 16 muffins.
