Potato Logs

6 med potatoes
1/4 c soft butter
1 tsp salt
1/4 tsp thyme OR savory
1/4 tsp pepper
1 egg yolk, keep white for dipping
Cook and mash potatoes. Add other ingredientd and mix well.
Shape into logs using 2 heaping tbsp for each log. Dip in egg white and roll in 2 c crushed corn flakes.

Place on greased cookie sheet. Bake 400 degrees for about 20 mins or until golden brown. Can be made a day ahead and kept in the fredge. Heat and serve.

Alternative method:
same ingredients plus 1/2 c sour cream &
1/2 c cream cheese, softened
Place mixture in 9x9" casserole dish and top with crushed corn flakes. Bake same.

When I bought this to a church lunch; everyone thought it was chicken UNTIL they tasted it!! Looks just like a chicken drumette.
