2 lbs. peeled potatoes
oil for cooking
ice water
2 eggs
2 tbsp flour
1/2 tsp baking powder
3/4 tsp salt
1/4 tsp pepper
Grate potatoes. Do not grate too finely.
Put in ice water rapidly.
Leave in water for 15 minutes; then drain and pat dry. Mix potato with rest of ingredients, except oil.
Heat oil in frying pan 1/4" oil and drop large tablespoons (1/8 cup) of mixture in hot oil, flatten and turn golden
brown.
Drain on paper towels. Serve with applesauce or sour cream. Can be frozen; reheat 400 degrees until sizzling.
