Juanie's Kitchen

Latkes

2 lbs. peeled potatoes
oil for cooking
ice water
2 eggs
2 tbsp flour
1/2 tsp baking powder
3/4 tsp salt
1/4 tsp pepper

Grate potatoes. Do not grate too finely.

Put in ice water rapidly.

Leave in water for 15 minutes; then drain and pat dry. Mix potato with rest of ingredients, except oil.

Heat oil in frying pan 1/4" oil and drop large tablespoons (1/8 cup) of mixture in hot oil, flatten and turn golden brown.

Drain on paper towels. Serve with applesauce or sour cream. Can be frozen; reheat 400 degrees until sizzling.

Michelle's recipe that she made for me when she was settling in at the apartment in Grand Falls just after the flood in Badger. She managed to save her cook books and her love of cooking.
