Peel 3 lbs. potatoes (approx. 10 med. potatoes)
Thinly slice and boil until tender (approx 20 mins.)
Drain and mash immediately while hot.
Add 2 tbsp. becel margarine
1/4 c skim milk
1/2 tsp onion powder
1/2 tsp salt (or salt to taste)
1/4 tsp pepper
2 tsp sugar
1 (250g)package light cream cheese, cut in cubes
1 small tub fat free sour cream
Mash in margarine, cream cheese. Stir in all other ingredients and transfer to 9x13" casserole dish
Sprinkle on 1/4 c. flavoured cracker crumbs (onion flavoured or Purity lemon creams)
Bake in oven for 15 minutes on 350 degrees.
